If there were a Wiki for North Carolina non-conference football scheduling this millennium, it would be a fascinating and depressing read. 2001 is an excellent cut-off date because it is the beginning of one of the stupidest streaks in sports: UNC has not won a P5 opener against a non-conference team since 2000.
